Zell Rosè Classic Method Brut TRENTO DOC A jewel of our territory obtained according to the classic method of refermentation in the bottle. THE VINEYARD The Pinot Noir grapes selected for the cuvée come exclusively from vineyards in the locality of Zell, a district of Trento located 500 meters above sea level, where historically the grapes from Mount Calisio destined for sparkling wine base are selected. The vineyards, arranged in a hillside manner, are situated on a large natural terrace facing south towards the Adige Valley, characterized by shallow, draining soils rich in flakes of marly limestone. THE WINEMAKING The grapes, harvested by hand in small crates, are picked slightly earlier than full ripeness to preserve their acidity and freshness. After a brief maceration on the skins at low temperatures to extract the characteristic color, the grapes undergo soft pressing and racking to clarify the must. At this point, selected yeasts are added and the first fermentation takes place in steel at a temperature of 17/19°C. The following spring, the new wines are tasted and selected, and then prepared for the second fermentation in the bottle. The sparkling process occurs slowly. Zell Rosè stays on the lees for at least 30 months before being disgorged. TASTING The color is pale pink, with a dense, fine, and persistent perlage. On the nose, it is elegant, fruity, fresh, and fragrant with a slight hint of yeast. On the palate, it combines freshness, elegance, and good persistence, making it suitable both as an aperitif and as an accompaniment to a full meal; it is also well-suited to special pairings with elaborate dishes from the classic Italian tradition, such as steamed fish and shellfish.
