Description
The “Cervio” Sant’Antimo DOC is the masterpiece of precision viticulture from the Poggio Il Castellare estate, located on the renowned south-eastern slopes of Montalcino. This wine thrives in a classic Mediterranean microclimate, where abundant sunny days and constant mid-hill breezes ensure perfectly healthy vines and a slow, full ripening of the grapes.
Winemaking and Oak Aging
The production of “Cervio” begins with a meticulous hand-harvest, ensuring only the finest grapes reach the cellar. Alcoholic fermentation is conducted at controlled temperatures (below $26$°C) with approximately 10 days of skin contact, followed by malolactic fermentation in stainless steel tanks.
The wine’s sophisticated structure is developed through 18 months of aging in French oak barrels (ranging from 225 to 500 liters). To ensure maximum elegance and balance, the “Cervio” undergoes an additional 4 months of bottle refinement before its commercial release, resulting in a wine of exceptional character and aging potential.
