Description
The Rosso di Montalcino DOC by Poggio Il Castellare represents the vibrant and accessible side of Montalcino’s winemaking tradition. Cultivated on mid-hill slopes, the vines thrive in a Mediterranean microclimate where frequent breezes and abundant sunshine ensure optimal plant health and a perfectly balanced ripening process.
Winemaking and Traditional Aging The process begins with a meticulous hand-harvest of grapes at peak ripeness. Fermentation is carried out at a controlled temperature of 26°C, with 7-8 days of skin maceration to extract vibrant color and refined tannins. After malolactic fermentation in stainless steel, the wine moves to the aging phase.
This Rosso di Montalcino is aged for 8-10 months in large 30 Hl oak casks. This traditional method allows the wine to develop complexity and structural harmony while maintaining the fresh, fruit-forward profile that defines the DOC, resulting in a sophisticated yet approachable Sangiovese.
