ZELL Metodo Classico Brut Nature TRENTO DOC A jewel of the Trentino territory obtained according to the classic method of refermentation in the bottle. THE VINEYARD The Chardonnay grapes selected for the cuvée come exclusively from vineyards in the locality of Zell, a district of Trento located 500 m above sea level, where historically the grapes from Mount Calisio destined for sparkling base are selected. The vineyards, arranged on a hillside, are located on a wide natural terrace faced south towards the Adige valley, characterized by shallow, draining soils rich in marly limestone flakes. The grapes, meticulously handpicked and placed in small crates to safeguard the integrity of the bunches, are harvested slightly ahead of full ripeness to preserve their acidity and freshness. After a gentle pressing of the grapes, our selected yeasts are added to the must, and the first fermentation takes place in stainless steel tanks at a temperature of 17/19°C. In March, the blends are tasted, and those selected, worthy of becoming Zell, make up the cuvée intended for the tirage and are then prepared for the second fermentation in the bottle. The sparkling process occurs slowly. Zell stays on the lees for at least 40/46 months before proceeding to remuage and dégorgement. TASTING The color is intense straw yellow, with abundant white foam, and fine, persistent bubbles. On the nose, it is pronounced, with marked floral notes, yeast, elegant with a slight hint of bread crust.
